Pumpkin Chai Smoothie

Yay, October is here! Here in San Diego, October means you start wearing t-shirts rather than tank tops ๐Ÿ˜‚  (I know, rough life). Despite San Diego's endless Summer, I'm happily dusting off the crockpot, and ooh-ing and ahh-ing over Fall produce at my favorite local Co-op: cabbage, Brussels sprouts, and all da squashes (butternut, acorn, kuri, kabocha, oh my!) ... Wait, did I forget something?

Oh right, PUMPKIN!

So there are people out there who are legit cray cray over pumpkin. Thankfully, I do not fall into that category, but I do love me some pumpkin bread (gluten-free, of course), pumpkin curries, pumpkin chia parfaits, pumpkin smoothies ...

Oh wait ... about not being a pumpkin fanatic ... ๐Ÿ˜ฌ

Since it's still rather toasty in my neck of the woods, I married some of my favorite Fall flavors {pumpkin, chai}, with my favorite Summer drink {smoothies}, and voilร  - my Pumpkin Chai Smoothie was born!

WHY THIS SMOOTHIE ROCKS:

Real talk: it is a nutritional powerhouse. Pumpkin is extremely high in Vitamin A (where 1 cup mashed, cooked pumpkin is equivalent to 200% your daily value!), beta-carotene (anti-oxidant), fiber, copper, calcium, potassium, and phosphorus. Coconut milk contains healthy fats known as medium chain triglycerides (MCTs), which provides the feeling of being full and satisfied, prevents overeating and food cravings, and is anti-inflammatory (among other amazing benefits). Hemp Seeds are truly a superfood; they are a perfect and natural blend of easily digested proteins, essential fats (Omega 3 & 6), Gamma Linolenic Acid (GLA), antioxidants, amino acids, fiber, iron, zinc, carotene, phospholipids, phytosterols, vitamin B1, vitamin B2, vitamin B6, vitamin D, vitamin E, chlorophyll, calcium, magnesium, sulfur, copper, potassium, phosphorus, and enzymes (phew!).
