Summertime is drawing to a close in San Diego, and I am taking advantage of the fresh berry bounty while it lasts! I try my best to shop seasonally and locally, and recently had a boat load of blackberries. Naturally, the first thing I thought of was ... SMOOTHIE!
why this smoothie rocks:
Blackberries are loaded with Vitamin C, and both soluble and insoluble fiber (which is important to keep things movin', if ya know what I mean...). Blackberries are rich in antioxidant compounds that protect against aging, inflammation, cancer, and neurological disease. Kale, a sulfur-containing cruciferous vegetable, additionally contributes minerals that we usually don't get enough of: calcium, magnesium, potassium, and Vitamin K. Like blackberries, kale is also high in Vitamin C and antioxidants.
Ingredients + Instructions:
- Half pint of organic blackberries
- 1 small bunch of kale,
de-stemmed and roughly chopped
- 2 frozen bananas, peeled and sliced
- Small handful of mint
- 2 dates
- 4-5 ice cubes
- 2 cups coconut or almond milk
(or one cup of each!)
Put all of the ingredients into a blender and process until smooth. Enjoy!
